Browning butter removes water and caramelizes milk solids, adding a nutty, toffee note that plain butter cannot replicate. It's the single biggest flavor upgrade you can make.
Resting the dough 24–72 hours in the fridge hydrates the flour fully, which concentrates flavor and creates a cookie that spreads less and develops deeper color and complexity.
Egg whites set structure; yolks provide fat and richness. Adding a third yolk (without its white) gives chewy centers without making the dough too dry or cakey.
Pre-formed chips contain stabilizers to hold their shape. Hand-chopped chocolate creates irregular shards that melt differently — large pools of chocolate, not just chips.
Cook butter in a light-colored saucepan over medium heat, swirling often, until it foams, subsides, and turns amber with brown specks. Pour into a large bowl to stop cooking. Cool 10 minutes.
Whisk both sugars into the warm (not hot) brown butter vigorously for 1 minute. Add eggs, extra yolk, and vanilla. Whisk another 2 minutes until pale and slightly thick — this dissolves the sugar and adds structure.
Add flour, baking soda, and salt. Fold with a spatula just until combined. Do not overmix. Fold in chopped chocolate last. The dough will be soft and slightly oily-looking — that's correct.
Cover and refrigerate for at least 8 hours, ideally 24–72. The longer you wait, the better the cookie. If you must bake same-day, chill 30 minutes minimum — results will still be good, just not transcendent.
Preheat oven to 190°C / 375°F. Scoop 2-tablespoon balls onto a lined tray, spacing 7cm apart. Bake 10–11 minutes until golden at edges but underdone in center — they set as they cool. Immediately press extra chocolate pieces on top and sprinkle generously with flaky salt.
